So now I'm wondering... how does Zoe (or anyone) determine who is possessed? Is it only through their actions? Because I could see a few savvy demons just chilling while their hosts escape.

On the one hand, Meander's saved the day. On the other hand, she's now trapped in a basement with the main demon blocking the only way out, and the others don't know exactly where she is.

It may well have the kind of lock that can be opened from the inside without a key (once the magic barrier is gone). The door to the basement? The demons are clearly capable of acting like normal humans when they don't want to reveal their presence. I would guess that the spell that transfers a demon from a person to the book does nothing if the person isn't possessed. If so, Zoë could just try the spell on everybody. The problem is that panicked people won't stand in line to be tested for demonic possession.
